Currently, mezcal is produced using the traditional system of harvesting the central core of the agave plant (the 'piña'). There are mezcals made 100% from agave, and the legal minimum is that it must contain 60%, with the rest coming from other diverse products. In Mexico, mezcal is generally consumed in a single shot and has a smoky flavor. Although it is not as popular as tequila (which is made similarly to mezcal, but from a different plant of the Agave genus).

Tequila is a type of mezcal, the name given to all distilled alcoholic beverages made from agave. Tequila, however, differs from other mezcals because it meets the strict standards of the Tequila Regulatory Council, which grants it the denomination of origin from Mexico, and it can only be manufactured in the specific regions mentioned above. It also differs in the type of agave used in its production; in the case of mezcal, Agave potatorum is used.
